Vinification and ageing

Yield 5 tons per hectare / 20,23 tons per acre;
Harvest time Merlot beginning of September, Sangiovese early October, Cabernet S. beginning of October;
Picking grapes are hand picked and carried in 20kg-cases;
Pressing soft pressing with immediate pumping of the juice to the vats. 2 days at low temperature before introducing selected yeasts;
Fermentation in temperature-controlled stainless steel vats for about 25-30 days.
Fermentation Temperature 28/30°C;
Malolactic fermentation complete, in Barriques; Ageing: in French Barriques, 1/4 new ¾ second and third passage, for about 24 months;

Color A red wine with a hint of ruby, confirming a warm year in which the color evolves rapidly.
Perfume A very complex bouquet with a wide spectrum of aromas, especially tertiary ones due to maturing in wooden casks. You can detect the smoked notes typical of the evolution of Sangiovese grapes, mentholated balsamic tones and minerals typical of Merlot and Cabernet.
Taste maintains a balance between tannins and acidity, a fine union between vine varieties from the point of view of well-made organoleptic wine, with its elegant and wide structure, vigorous and firm. To sum it up, a fine “Orma”. It is ready to drink but will age well.
