Made by our best Sangiovese vineyard from the toponym “Il Mulinaccio”.
The low yield per hectare and the agronomic practices performed allow to get
widely-spaced bunches, obtaining an optimal technological and phenological
maturity for a grape of a superior quality.
A deep ruby red wine, with good olfactory intensity, with ripe red fruit, raspberry. Its tertiary aromas are tobacco and a sliglty balsamic closing.
On the taste it is presented with soft and fresh tannins, well balanced, with warm and savory note in closing.

The vineyards that give life to Boncitto are part of the estate, in particular the part of the land that extends west of the seventeenth-century Villa.
Sangiovese Vines with over 20 years of life, with a south/south-west exposure and an altitude of 250 meters above sea level.
Pinot Nero Vines are instead on the southern side of the estate, at an altitude of about 200 meters above sea level.
Lastly, the Chardonnay, grown in the only vineyard on the farm entirely dedicated to this variety. A relatively young vineyard – five years of life – which is an important novelty for this territory and for Chianti, and was the first step for the production of this sparkling wine.

Vinification and ageing

Yield: 5,5/6 tons per hectare
Harvest time: beginning of october
Picking: grapes are hand picked and carried in 20 kg-cases
Pressing: soft pressing with immediate pumping of the juice to the vats at
controlled temprature
Fermentation temperature: 28°/30° C
Malolactic fermentation: in steel
Ageing: in 20 hl oak barrels for 12 months
Bottle ageing: 1 year
