Orma Del Diavolo draws its strength from the name of the vineyard from which it comes, an ancient rock on which is imprinted a form that in the past colonists had identified as the footprint of a Devil. Bordeaux blend of Sangiovese, Merlot and Cabernet Sauvignon, is one of our most harvested wines thanks to the vineyards planted more than forty years ago.

Vines

The vineyards from which Orma del Diavolo is produced grow for 3.5 hectares of land.
Sangiovese vines with over 20 years of life, with a south/south west exposure and an altitude of 280 meters above sea level.
The vineyards of Merlot are located in the south of the estate, at an altitude of about 200 meters above sea level.
Finally, Cabarnet, a grape variety of Bordeaux origin, with a strong ductility, suitable for the production of wines of great quality and longevity.

Vinification and ageing

Yield: 4.5 tons per hectare
Harvest time: Merlot beginning of september, Sangiovese early october,
Cabernet Sauvignon beginning of october
Picking: grapes are hand picked and carried in 20 kg-cases
Pressing: soft pressing with immediate pumping of the juice to the vats, 2 days
at low temperature before introducing selected yeasts
Fermentation: in temperature-controlled stainless steel vats for about 25-30
days
Fermentation temperature: 28°/30° C
Malolactic fermentation: complete, in barriques
Ageing: in french barriques, 1/4 new 3⁄4 second and third passage, for about
24 months
Bottle ageing: 6 months
