“Quarto di Luna”
Chardonnay Toscana IGT

Our selected Chardonnay grapes come from the cultivation of old strains of over forty years.
After harvesting the grapes are kept in the fridge to avoid contact with the skins during pressing and to preserve their freshness. At the end of fermentation the wine remains to macerate on the lees for about 6 months before being filtered and bottled.

Vines

The Quarto Di Luna’s grapevines arise in the land owned by the Cattaneo brothers that extend over about 2.5 hectares.
Quarto Di Luna is cultivated in a vineyard of Chardonnay with over 10 years of life, with a south/south-west exposure and an altitude of 300 meters above sea level.
Quarto di Luna is produced in a plant of 5650 plants h/a through a spurred cordon culture system, a vine-growing system that during winter pruning selects 5/7 well lignified and positioned shoots from which two, three spurs will be obtained.

Vinification and ageing

Yield: 5 tons per hectare
Harvest time: end of August/first week of September
Picking: grapes are hand picked and carried in 20 kg-cases
Maceretion: the selected grapes under go cold maceration with dry ice in the
press for a few hours at 8°/10° C
Fermentation: 90% in temperature-controlled stainless steel vats, 10% in 500 lt. barrels.
Fermentation temperature: 16°/18° C
Ageing: 90% 6 months stainless steel tanks on the lees, 10% in 500 lt wood barrels.
Malolactic fermentation: no
Bottle ageing: 2 months
