Sparkling wine Brut Millesimato Organic
Brut Sparkling wine made from Chardonnay, Pinot Noir and Sangiovese grapes.
The harvest occurs in August, at the ideal time to make acidity prevail.
After a passage in the refrigerator, the grapes are pressed cold as for a white vinification. From the must is made a mono fermentation through which the primary aromas of the fruit are exalted.

Vines
The grapevines that give life to Boncitto are part of the estate, in particular the part of land that extends to the west of the seventeenth-century Villa.
Vineyards of Sangiovese with over 20 years of life, with a south/south-west exposure and an altitude of 250 meters above the sea level.
The Pinot Noir Vineyards are on the south area of the estate, at an altitude of about 200 meters above sea level.
Lastly, Chardonnay, grown in the only vineyard on the farm entirely dedicated to this variety. A relatively young vineyard – five years of life – which is an important innovation for this territory and for Chianti and it was the first step in the production of this sparkling wine.
Vinification
Yield: 4.5 tons per hectare
Harvest: Chardonnay and Pinot Nero end of August, Sangiovese first week of September. Harvesting in 15 kg perforated boxes, followed by storage in the fridge at 0°C per 24H.
Pressing: soft whole bunches
Decanting: natural cold static of the must
Mono Fermentation
Fermentation: with foaming in an autoclave at controlled temperature at 16 º C followed by maturation on the yeast for 6 months.
Aging: minimum 2 months in bottle
