Wine with a golden yellow colour, beautiful brightness; the bouquet is of medium
intensity, very appealing with fresh, citrus and fruity notes. Has pleasant notes
of apple and white melon.
In the mouth it is fresh, pleasant and well balanced in the alcoholic part.
The mouth closes with great pleasure and drinkability, good aromatic persistence
and good structure.
It is a wine to pair with a light lunch of pasta or risotto with mushrooms or
vegetables, fresh cheeses and salads but also cured meats and seafood salads:
its medium structure allows it to pair well with white meats like roasted rabbit.

Vinification and ageing
Yield 50 tons per hectare;

Picking grapes are hand picked and carried in 20kg-cases;
The selected grapes are de-stemmed and left to rest in the press for a few hours where they undergo a cryomaceration with dry ice at a temperature of 8 ° / 10 ° c. The first part of fermentation takes place in stainless steel tanks; when fermentation is well underway, 3/4 of the must is vinified in French oak tonneaux (1st and 2nd year wood).
The remaining must continues its journey in steel.
At the end of the fermentation, the containers are filled with the refinement on the fine lees for 12 months.
Daily batonages are performed in the first months, up to 1 per week in the final part of the evolutionary process.
